- 140g butter
- 1 large cauliflower , broken into small florets
- 200g potato , diced
- 500ml whole milk
- 500ml vegetable stock
- 75g plain flour
- 2 eggs
- 75g hard sheep's cheese (like Wigmore or pecorino)
- scattering of chives , to serve
