Carrot Puree Recipe

Ingredients:
  • * 2 pounds carrots, cut into 1 inch pieces
  • * Coarse salt and freshly ground pepper
  • * 1 tablespoon butter
  • * 1/4 cup sour cream
  • Directions 1. Place carrots in a large saucepan, add water to cover and 1 teaspoon salt. Bring to a boil, then turn heat to low and cook until carrots are soft, about 30 minutes.
