Butternut gnocchi with brown butter & sage
- 150g butter
- 1 garlic clove , peeled
- 20 sage leaves
- a pinch chilli flakes
- lemon , 1 tbsp of juice, 1 tbsp of zest
- 200g floury potatoes
- 800g butternut squash , halved lengthways
- 75g parmesan , plus extra for serving
- tsp ground nutmeg
- 3 small egg yolks
- 225g '00' or plain flour , plus extra for rolling
