  • 1 medium yellow onion, sliced into thin rings
  • Ice water
  • Juice of 1 lemon
  • ¼ cup champagne vinegar
  • 1 tablespoon minced flat-leaf parsley

  • 1 whole scallion, trimmed and thinly sliced
