  • 1/4 teaspoon fine grain sea salt
  • 1 large egg, room temperature
  • 1 3/4 cup / 8 oz / 225g whole wheat pastry flour
  • Filling:
  • scant cup / 225 ml heavy whipping cream
  • 2 tablespoons milk
  • 7 ounces / 200g 70% bittersweet chocolate, chopped
  • 1 large egg, beaten
  • flaky sea salt, cocoa powder
  • equipment: two 9-inch tart pans (or equivalent).
