Ingredients:
  • For the sponge layer:
  • 125g butter or margarine, softened at room temperature
  • 125g Billingtons unrefined golden caster sugar
  • 2 large eggs
  • 2 tsp Nielsen Massey almond extract
  • 125g Allinson Nature Friendly self raising flour
  • Milk
  • For the fruit layer:
  • 4 tbsp strawberry conserve
  • 100ml sherry
  • 1 tbsp brandy
  • 300g fresh blackberries
  • 300g fresh raspberries
  • 300g fresh strawberries
  • 85g flaked almonds, toasted
  • For the custard layer:
  • 280ml double cream
  • 25g Billingtons unrefined golden caster sugar
  • 3 egg yolks
  • 1tsp cornflour
  • For the syllabub topping:
  • 100ml sherry
  • 1 tbsp brandy
  • 1 orange, juice only
  • 50g Billingtons unrefined golden caster sugar
  • 300ml double cream
  • To garnish:
  • Blueberries, raspberries, flaked almonds
