Bela's Stuffed Red Bell Peppers
- 1 cup uncooked brown rice
- 2 1/4 cups water
- 4 red bell peppers, tops and seeds removed
- 1 teaspoon olive oil
- 1/4 onion, chopped
- 2 cloves garlic, chopped
- 1 (15 ounce) can black-eyed peas, rinsed and drained
- 2 large Swiss chard leaves, chopped
