  • 1¼ teaspoons baking soda
  • 2½ teaspoons baking powder
  • ¾ teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • ¾ teaspoon freshly grated nutmeg
  • Scant ¼ teaspoon ground cloves
  • 1 tablespoon poppy seeds
  • ½ cup granulated sugar, plus 1 teaspoon extra for sprinkling
  • ¼ cup plus 2 tablespoons light brown sugar, lightly packed
  • 1½ cups unbleached all-purpose flour
