  • 3 cups water
  • ½ cup diced sweet red bell peppers
  • ¼-½ cup chopped walnuts
  • ¼ cup minced fresh parsley
  • ½ teaspoon thyme
  • ½ teaspoon sea salt
  • 2 pounds mushrooms, cut into thirds
  • 3 medium onions, diced into 1-inch pieces
  • 1 tablespoon sesame oil
  • Dash of wine vinegar
  • 1 cup thick starch (from preparing homemade gluten) (see Notes)
  • Natural soy sauce, to taste
  • Sea salt, to taste
  • ¼ cup chopped fresh parsley
