  • 1 teaspoon chopped fresh rosemary
  • Kosher salt and freshly ground black pepper
  • Four 6-ounce pieces swordfish, cut long and thin so each is 4 or 5 inches long

  • 1 teaspoon crushed red pepper flakes
  • 2 ounces provolone, thinly sliced or grated
